Brunch is best when prepared for someone special.
This was a Birthday Brunch for a Special Mom- my Mom! She is such a sweet person and always doing things for everyone she knows, so we put together a delicious menu of my butternut squash and chicken enchiladas with New Mexico red chile, of course. Also some spanish rice, a healthy green salad with pomegranate seeds and pecorino cheese with a light honey and vinegar dressing we learned to make on one of the Italy trips.
I made her bouquet with garnet spikey petal gerbera daisies, light lavendar roses, and white spider mums. Her strawberry cupcakes we topped with little angel fairies to celebrate her light heart and love of angels.
We enjoyed all of the family and friends who came to give her birthday wishes and know that she has happy memories of that day!
